Coconut Flour & Banana Pancakes


£1.22 (depending on your choice of milk - we used organic whole milk). Makes 2 medium sized pancakes


  • 30g coconut flour
  • 1 banana
  • Pinch of salt
  • 2 eggs
  • 120ml milk (any milk)


  • Mash the banana well, until smooth.
  • Whisk milk, eggs and banana together.
  • Add the salt and coconut flour.
  • Ladle mixture onto a very hot pan.
  • Cook for 3-4 minutes and then flip.
  • Serve with fresh fruit or Good Food's cheeky chocolate and banana jam.
