Coconut Flour & Banana Pancakes
£1.22 (depending on your choice of milk - we used organic whole milk). Makes 2 medium sized pancakes
- 30g coconut flour
- 1 banana
- Pinch of salt
- 2 eggs
- 120ml milk (any milk)
- Mash the banana well, until smooth.
- Whisk milk, eggs and banana together.
- Add the salt and coconut flour.
- Ladle mixture onto a very hot pan.
- Cook for 3-4 minutes and then flip.
- Serve with fresh fruit or Good Food's cheeky chocolate and banana jam.
