Squash & Fennel Salad with Pomegranate

£10.15 - serves 4-6

Ingredients

  • 1 butternut squash
  • 1 tbsp olive oil
  • 2 heads of fennel
  • 1/2 lemon, juice and zest
  • 1 orange, juiced
  • 1/2 tsp brown sugar
  • Pinch salt and pepper
  • 150g salad leaves
  • Seeds from 1 pomegranate

Dressing

  • 1/2 lemon, juiced
  • 1 tbsp pomegranate syrup
  • 2 tbsp olive oil
  • Pinch salt

Method

  1. Put squash, fennel, olive oil, sugar, lemon, orange, salt and pepper in a roasting tray and roast for 10-15 minutes, until the veg is tender.
  2. Prepare the dressing by combining ingredients and whisking.
  3. Mix roasted squash and fennel with salad leaves, pomegranate seeds and dressing.
